Smoked Paprika and Chive Omelette Bites with Spiced Apple Compote

A creative brunch dish featuring bite-sized omelettes filled with smoked paprika and chives, served with a sweet and spicy apple compote.

Smoked Paprika and Chive Omelette Bites

Ingredients:

  • 1 dozen large eggs
  • 2 tablespoons unsalted butter, melted
  • 1 tablespoon chopped fresh chives
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1 cup shredded cheese (such as cheddar or mozzarella)
  • Fresh chives for garnish

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. In a medium bowl, whisk together eggs, melted butter, chopped chives, smoked paprika, salt, and pepper.
  3. Pour the egg mixture into a greased mini muffin tin or a 12-cup muffin tin.
  4. Sprinkle shredded cheese over the top of each omelette.
  5. Bake for 15-20 minutes or until the eggs are set and the cheese is melted and golden brown.

Spiced Apple Compote

Ingredients:

  • 2 apples, peeled and diced (such as Granny Smith or Honeycrisp)
  • 1/4 cup brown sugar
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • Salt to taste
  • 1 tablespoon unsalted butter

Instructions:

  1. In a medium saucepan, combine diced apples, brown sugar, apple cider vinegar, ground cinnamon, and salt.
  2. Cook over medium heat, stirring occasionally, until the apples are tender and the liquid has thickened slightly.
  3. Stir in unsalted butter until melted.
  4. Serve warm or at room temperature.

Assembly

  1. Place a few omelette bites on each serving plate.
  2. Spoon Spiced Apple Compote alongside the omelettes.
  3. Garnish with fresh chives and serve immediately.
