Smoked Paprika and Chive Omelette Bites
Ingredients:
- 1 dozen large eggs
- 2 tablespoons unsalted butter, melted
- 1 tablespoon chopped fresh chives
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- 1 cup shredded cheese (such as cheddar or mozzarella)
- Fresh chives for garnish
Instructions:
- Preheat the oven to 375°F (190°C).
- In a medium bowl, whisk together eggs, melted butter, chopped chives, smoked paprika, salt, and pepper.
- Pour the egg mixture into a greased mini muffin tin or a 12-cup muffin tin.
- Sprinkle shredded cheese over the top of each omelette.
- Bake for 15-20 minutes or until the eggs are set and the cheese is melted and golden brown.
Spiced Apple Compote
Ingredients:
- 2 apples, peeled and diced (such as Granny Smith or Honeycrisp)
- 1/4 cup brown sugar
- 2 tablespoons apple cider vinegar
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- Salt to taste
- 1 tablespoon unsalted butter
Instructions:
- In a medium saucepan, combine diced apples, brown sugar, apple cider vinegar, ground cinnamon, and salt.
- Cook over medium heat, stirring occasionally, until the apples are tender and the liquid has thickened slightly.
- Stir in unsalted butter until melted.
- Serve warm or at room temperature.
Assembly
- Place a few omelette bites on each serving plate.
- Spoon Spiced Apple Compote alongside the omelettes.
- Garnish with fresh chives and serve immediately.
