Seared Salmon with Roasted Carrot & Ginger Glaze

A quick and flavorful dish with tender salmon and a vibrant, slightly spicy glaze.

Ingredients:

  • 2 salmon fillets (skin on)
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup chopped carrots
  • 1 inch ginger, grated
  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • 1 tablespoon rice vinegar

Instructions:

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Season salmon fillets with salt and pepper. Heat olive oil in an oven-safe skillet over medium-high heat.
  3. Sear salmon skin-side down for 3-4 minutes, or until crispy. Flip and cook for another 2-3 minutes, or until cooked through. Transfer to the prepared baking sheet.
  4. In a bowl, whisk together carrots, ginger, soy sauce, honey, and rice vinegar. Spread mixture evenly over the salmon fillets.
  5. Roast in preheated oven for 10-12 minutes, or until glaze is bubbly and caramelized.
  6. Serve immediately with your favorite sides, such as steamed rice or quinoa.
