Ingredients:
- 2 salmon fillets (skin on)
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup chopped carrots
- 1 inch ginger, grated
- 2 tablespoons soy sauce
- 1 tablespoon honey
- 1 tablespoon rice vinegar
Instructions:
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Season salmon fillets with salt and pepper. Heat olive oil in an oven-safe skillet over medium-high heat.
- Sear salmon skin-side down for 3-4 minutes, or until crispy. Flip and cook for another 2-3 minutes, or until cooked through. Transfer to the prepared baking sheet.
- In a bowl, whisk together carrots, ginger, soy sauce, honey, and rice vinegar. Spread mixture evenly over the salmon fillets.
- Roast in preheated oven for 10-12 minutes, or until glaze is bubbly and caramelized.
- Serve immediately with your favorite sides, such as steamed rice or quinoa.
