Salted Caramel Apple Hand Pies

A twist on classic apple pie, these individual hand pies are filled with a sweet and tart caramel apple mixture and topped with a flaky, buttery crust.

Ingredients:

  • For the Crust:

    • 2 1/4 cups all-purpose flour
    • 1 teaspoon salt
    • 1 cup (2 sticks) unsalted butter, cold and cubed
    • 1/2 cup ice water
  • For the Filling:

    • 6 medium apples, peeled, cored, and diced
    • 1/2 cup granulated sugar
    • 1/4 cup packed brown sugar
    • 1/4 cup all-purpose flour
    • 1 teaspoon ground cinnamon
    • 1/4 teaspoon ground nutmeg
    • 1/4 cup salted caramel sauce

Instructions:

  1. Make the Crust: In a large bowl, whisk together flour and salt. Cut in butter using a pastry blender or your fingers until mixture resembles coarse crumbs. Gradually add ice water, mixing until dough just comes together. Divide dough in half, flatten into disks, wrap in plastic wrap, and refrigerate for at least 1 hour.

  2. Prepare the Filling: In a large saucepan, combine apples, granulated sugar, brown sugar, flour, cinnamon, and nutmeg. Cook over medium heat, stirring occasionally, until apples are softened and mixture thickens (about 10-15 minutes). Stir in salted caramel sauce. Remove from heat and let cool completely.

  3. Assemble the Hand Pies: Preheat oven to 375°F (190°C). Line baking sheets with parchment paper. On a lightly floured surface, roll out one disk of dough to a 1/8-inch thickness. Use a 4-inch round cookie cutter to cut out circles. Spoon about 2 tablespoons of filling into the center of each circle. Fold dough over to create half-moon shapes, pressing edges together firmly with a fork.

  4. Bake: Place hand pies on prepared baking sheets and bake for 18-20 minutes, or until golden brown. Let cool slightly before serving.
