Salted Caramel Apple Fritters with Cinnamon Cream
Ingredients:
- For the fritters:
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1/4 cup granulated sugar
- 1 egg
- 1/2 cup milk
- 1/4 cup melted unsalted butter
- 1 teaspoon vanilla extract
- 1 medium apple, peeled, cored and diced
- For the salted caramel sauce:
- 1 cup granulated sugar
- 1/4 cup water
- 1/2 cup heavy cream
- 4 tablespoons unsalted butter, cut into pieces
- 1/4 teaspoon sea salt
- For the cinnamon cream:
- 1 cup heavy cream
- 1/4 cup powdered sugar
- 1 teaspoon ground cinnamon
Instructions:
- Make the fritters: In a large bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and sugar. In a separate bowl, whisk together egg, milk, melted butter, and vanilla extract. Pour the wet ingredients into the dry ingredients and stir until just combined. Gently fold in the diced apple.
- Heat oil: Heat about 2 inches of vegetable oil in a large pot over medium heat to 350°F (175°C).
- Fry fritters: Drop spoonfuls of batter into the hot oil, frying in batches until golden brown and cooked through, about 2-3 minutes per side. Remove with a slotted spoon and drain on paper towels.
- Make the salted caramel sauce: In a medium saucepan, combine sugar and water over medium heat. Cook, swirling occasionally, until sugar dissolves and turns a light amber color. Carefully pour in heavy cream (it will bubble vigorously), whisking constantly. Stir in butter and salt until smooth. Remove from heat and set aside to cool slightly.
- Make the cinnamon cream: In a chilled bowl, beat heavy cream with powdered sugar and cinnamon until stiff peaks form.
- Assemble fritters: Dip warm fritters into salted caramel sauce and top with a dollop of cinnamon cream. Serve immediately.
