Ingredients:
- 4 salmon fillets (about 6 ounces each)
- 2 large sweet potatoes, peeled and cubed
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup unsalted butter, softened
- 1 tablespoon chopped fresh rosemary
- 1 tablespoon lemon juice
Instructions:
- Preheat oven to 400 degrees F (200 degrees C).
- Toss sweet potatoes with olive oil, salt, and pepper on a baking sheet. Roast for 20-25 minutes, or until tender and slightly browned.
- While the sweet potatoes are roasting, combine softened butter, rosemary, and lemon juice in a small bowl.
- Place salmon fillets on a separate baking sheet lined with parchment paper. Drizzle with olive oil and season with salt and pepper.
- Bake salmon for 12-15 minutes, or until cooked through and flaky.
- Serve roasted sweet potatoes topped with the rosemary butter and alongside the baked salmon.
