Salmon with Roasted Sweet Potatoes and Rosemary Butter

A simple yet elegant dish featuring perfectly roasted sweet potatoes, flavorful rosemary butter, and flaky salmon.

Ingredients:

  • 4 salmon fillets (about 6 ounces each)
  • 2 large sweet potatoes, peeled and cubed
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup unsalted butter, softened
  • 1 tablespoon chopped fresh rosemary
  • 1 tablespoon lemon juice

Instructions:

  1. Preheat oven to 400 degrees F (200 degrees C).
  2. Toss sweet potatoes with olive oil, salt, and pepper on a baking sheet. Roast for 20-25 minutes, or until tender and slightly browned.
  3. While the sweet potatoes are roasting, combine softened butter, rosemary, and lemon juice in a small bowl.
  4. Place salmon fillets on a separate baking sheet lined with parchment paper. Drizzle with olive oil and season with salt and pepper.
  5. Bake salmon for 12-15 minutes, or until cooked through and flaky.
  6. Serve roasted sweet potatoes topped with the rosemary butter and alongside the baked salmon.
