Salmon with Roasted Garlic and Rosemary Potatoes

A simple yet flavorful weeknight dinner featuring pan-seared salmon and crispy roasted potatoes infused with garlic and rosemary.

Ingredients:

  • 2 salmon fillets (about 6 oz each)
  • 1 lb Yukon gold potatoes, quartered
  • 4 cloves garlic, smashed
  • 1 tbsp fresh rosemary, chopped
  • 2 tbsp olive oil
  • Salt and black pepper to taste

Instructions:

  1. Preheat oven to 400°F (200°C). Toss potatoes with olive oil, garlic, rosemary, salt, and pepper. Spread in a single layer on a baking sheet.
  2. Roast for 30-40 minutes, or until potatoes are tender and golden brown.
  3. While potatoes are roasting, season salmon fillets with salt and pepper. Heat 1 tbsp olive oil in a large skillet over medium-high heat.
  4. Sear salmon for 3-4 minutes per side, or until cooked through.
  5. Serve salmon immediately over roasted potatoes.
