Ingredients:
- 2 salmon fillets (about 6 oz each)
- 1 lb Yukon gold potatoes, quartered
- 4 cloves garlic, smashed
- 1 tbsp fresh rosemary, chopped
- 2 tbsp olive oil
- Salt and black pepper to taste
Instructions:
- Preheat oven to 400°F (200°C). Toss potatoes with olive oil, garlic, rosemary, salt, and pepper. Spread in a single layer on a baking sheet.
- Roast for 30-40 minutes, or until potatoes are tender and golden brown.
- While potatoes are roasting, season salmon fillets with salt and pepper. Heat 1 tbsp olive oil in a large skillet over medium-high heat.
- Sear salmon for 3-4 minutes per side, or until cooked through.
- Serve salmon immediately over roasted potatoes.
