Salmon with Roasted Garlic-Lime Vegetables

A vibrant and flavorful dish featuring seared salmon complemented by roasted vegetables infused with garlic, lime, and herbs.

Ingredients:

  • 4 Salmon fillets (6 oz each)
  • 1 head of Garlic, cloves separated and peeled
  • 1 large Bell pepper, diced
  • 1 medium Onion, chopped
  • 2 Carrots, sliced
  • 1 Zucchini, diced
  • 1/4 cup Olive oil
  • 2 Limes, zested and juiced
  • 2 tablespoons Fresh parsley, chopped
  • Salt and Black pepper to taste

Instructions:

  1. Preheat oven to 400°F (200°C). Toss garlic cloves with 2 tablespoons olive oil, salt, and pepper on a baking sheet. Roast for 20 minutes until softened and golden brown.
  2. While the garlic roasts, season salmon fillets with salt, pepper, and lime zest. Heat 2 tablespoons olive oil in a large skillet over medium-high heat. Sear salmon for 3-4 minutes per side until cooked through. Set aside.
  3. Add diced bell pepper, onion, and carrots to the same skillet and sauté for 5 minutes until slightly softened. Stir in zucchini and cook for another 2 minutes. Season with salt, pepper, and lime juice.
  4. Transfer roasted garlic cloves and vegetables to a serving dish. Top with seared salmon fillets. Garnish with fresh parsley and serve immediately.
