Ingredients:
- 4 Salmon fillets (6 oz each)
- 1 head of Garlic, cloves separated and peeled
- 1 large Bell pepper, diced
- 1 medium Onion, chopped
- 2 Carrots, sliced
- 1 Zucchini, diced
- 1/4 cup Olive oil
- 2 Limes, zested and juiced
- 2 tablespoons Fresh parsley, chopped
- Salt and Black pepper to taste
Instructions:
- Preheat oven to 400°F (200°C). Toss garlic cloves with 2 tablespoons olive oil, salt, and pepper on a baking sheet. Roast for 20 minutes until softened and golden brown.
- While the garlic roasts, season salmon fillets with salt, pepper, and lime zest. Heat 2 tablespoons olive oil in a large skillet over medium-high heat. Sear salmon for 3-4 minutes per side until cooked through. Set aside.
- Add diced bell pepper, onion, and carrots to the same skillet and sauté for 5 minutes until slightly softened. Stir in zucchini and cook for another 2 minutes. Season with salt, pepper, and lime juice.
- Transfer roasted garlic cloves and vegetables to a serving dish. Top with seared salmon fillets. Garnish with fresh parsley and serve immediately.
