Ingredients:
- 1 lb salmon fillet, skin on or off
- 1 tbsp coconut oil
- 1/2 cup unsweetened coconut milk
- 1 tbsp grated fresh ginger
- 1 tbsp soy sauce
- 1 tsp honey
- 1/4 tsp red pepper flakes (optional)
- 1 head broccoli, cut into florets
- Salt and black pepper to taste
Instructions:
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
In a small saucepan over medium heat, combine coconut milk, ginger, soy sauce, honey, and red pepper flakes (if using). Bring to a simmer, stirring occasionally, until slightly thickened, about 5 minutes.
Place salmon fillet on the prepared baking sheet. Brush evenly with half of the coconut-ginger glaze. Arrange broccoli florets around the salmon.
Roast for 12-15 minutes, or until salmon is cooked through and broccoli is tender.
Baste salmon with remaining glaze during the last few minutes of cooking.
Season with salt and black pepper to taste. Serve immediately.
