Salmon with Caramelized Sweet Potatoes and Rosemary-Mint Glaze

A flavorful and healthy dish featuring perfectly baked salmon topped with a sweet and savory rosemary-mint glaze and caramelized sweet potatoes.

Ingredients:

  • 2 Salmon filets (6-8 oz each)
  • 2 medium Sweet Potatoes, peeled and diced
  • 1 tbsp Olive Oil
  • 1 tsp Fresh Rosemary, chopped
  • 1 tbsp Fresh Mint, chopped
  • 2 tbsp Lemon Juice
  • 1 tbsp Honey
  • Salt and Black Pepper to taste

Instructions:

  1. Preheat oven to 400°F (200°C).
  2. Toss diced sweet potatoes with olive oil, salt, and pepper. Spread in a single layer on a baking sheet.
  3. Roast for 20-25 minutes, or until tender and slightly caramelized.
  4. While sweet potatoes are roasting, prepare the glaze by combining lemon juice, honey, chopped rosemary, and mint in a small bowl. Season with salt and pepper to taste.
  5. Place salmon filets on a separate baking sheet lined with parchment paper. Brush both sides generously with the rosemary-mint glaze.
  6. Bake salmon for 12-15 minutes, or until cooked through and flaky.
  7. Serve roasted sweet potatoes topped with baked salmon and remaining glaze.
