Ingredients:
- 2 Salmon filets (6-8 oz each)
- 2 medium Sweet Potatoes, peeled and diced
- 1 tbsp Olive Oil
- 1 tsp Fresh Rosemary, chopped
- 1 tbsp Fresh Mint, chopped
- 2 tbsp Lemon Juice
- 1 tbsp Honey
- Salt and Black Pepper to taste
Instructions:
- Preheat oven to 400°F (200°C).
- Toss diced sweet potatoes with olive oil, salt, and pepper. Spread in a single layer on a baking sheet.
- Roast for 20-25 minutes, or until tender and slightly caramelized.
- While sweet potatoes are roasting, prepare the glaze by combining lemon juice, honey, chopped rosemary, and mint in a small bowl. Season with salt and pepper to taste.
- Place salmon filets on a separate baking sheet lined with parchment paper. Brush both sides generously with the rosemary-mint glaze.
- Bake salmon for 12-15 minutes, or until cooked through and flaky.
- Serve roasted sweet potatoes topped with baked salmon and remaining glaze.
