Ingredients:
- 4 (6-ounce) Salmon fillets
- 1 tablespoon olive oil
- 1 tablespoon grated fresh ginger
- 1/4 cup minced red onion
- 1/4 cup coconut milk
- 2 tablespoons lime juice
- 1 tablespoon brown sugar
- 1 teaspoon soy sauce
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions:
- Heat olive oil in a large skillet over medium-high heat.
- Add salmon fillets to the skillet and cook for 3-4 minutes per side, or until cooked through and flaky.
- While the salmon is cooking, combine grated ginger, red onion, coconut milk, lime juice, brown sugar, soy sauce, salt, and pepper in a saucepan over medium heat. Bring to a simmer, stirring occasionally, and cook for 5-7 minutes, or until the glaze has thickened slightly.
- Remove the salmon from the skillet and drizzle with the coconut lime glaze.
