Salmon with Caramelized Ginger and Coconut Lime Glaze

A vibrant and flavorful dish featuring pan-seared salmon drizzled with a sweet and tangy coconut lime glaze infused with warming ginger.

Ingredients:

  • 4 (6-ounce) Salmon fillets
  • 1 tablespoon olive oil
  • 1 tablespoon grated fresh ginger
  • 1/4 cup minced red onion
  • 1/4 cup coconut milk
  • 2 tablespoons lime juice
  • 1 tablespoon brown sugar
  • 1 teaspoon soy sauce
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions:

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add salmon fillets to the skillet and cook for 3-4 minutes per side, or until cooked through and flaky.
  3. While the salmon is cooking, combine grated ginger, red onion, coconut milk, lime juice, brown sugar, soy sauce, salt, and pepper in a saucepan over medium heat. Bring to a simmer, stirring occasionally, and cook for 5-7 minutes, or until the glaze has thickened slightly.
  4. Remove the salmon from the skillet and drizzle with the coconut lime glaze.
  5. Serve immediately with your favorite side dishes.
