Salmon en Papillote with Roasted Bell Peppers and Lemon-Ginger Butter

A light and flavorful baked salmon dish bursting with Mediterranean flavors.

Ingredients:

  • 4 Salmon filets (6 oz each)
  • 2 Bell peppers (red and yellow), sliced
  • 1 Lemon, thinly sliced
  • 1 tbsp Olive oil
  • 2 cloves Garlic, minced
  • 1 inch Ginger, grated
  • 1 tbsp Butter
  • Salt and freshly ground Black pepper to taste
  • Fresh Parsley for garnish

Instructions:

  1. Preheat oven to 400°F (200°C).
  2. In a bowl, combine sliced bell peppers, lemon slices, olive oil, minced garlic, grated ginger, salt, and black pepper. Toss to coat evenly.
  3. Place each salmon filet on a square of parchment paper. Top with half of the bell pepper mixture.
  4. Dot each filet with a small amount of butter. Fold the parchment paper over the salmon to create a sealed packet.
  5. Bake for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.
  6. Garnish with fresh parsley and serve immediately.
