Ingredients:
- 4 Salmon filets (6 oz each)
- 2 Bell peppers (red and yellow), sliced
- 1 Lemon, thinly sliced
- 1 tbsp Olive oil
- 2 cloves Garlic, minced
- 1 inch Ginger, grated
- 1 tbsp Butter
- Salt and freshly ground Black pepper to taste
- Fresh Parsley for garnish
Instructions:
- Preheat oven to 400°F (200°C).
- In a bowl, combine sliced bell peppers, lemon slices, olive oil, minced garlic, grated ginger, salt, and black pepper. Toss to coat evenly.
- Place each salmon filet on a square of parchment paper. Top with half of the bell pepper mixture.
- Dot each filet with a small amount of butter. Fold the parchment paper over the salmon to create a sealed packet.
- Bake for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.
- Garnish with fresh parsley and serve immediately.
