Saffron Crusted Lamb Chops with Quince and Pistachio Relish
Ingredients:
For the Lamb:
- 4 lamb chops (1-1.5 inches thick)
- 2 tablespoons saffron threads, soaked in 2 tablespoons hot water
- 1 tablespoon olive oil
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- Salt and black pepper
For the Quince Relish:
- 2 quinces, peeled and grated
- 1/4 cup granulated sugar
- 2 tablespoons freshly squeezed orange juice
- 1 tablespoon chopped fresh mint
- 1/4 cup chopped pistachios
- Salt to taste
Instructions:
To Make the Lamb Chops:
- Preheat the oven to 400°F (200°C).
- In a small bowl, mix together saffron and its soaking liquid, olive oil, cumin, smoked paprika, salt, and black pepper.
- Rub the mixture all over the lamb chops, making sure they are evenly coated.
- Place the lamb chops on a baking sheet lined with parchment paper and bake for 15-20 minutes or until cooked to your desired level of doneness.
To Make the Quince Relish:
- In a medium saucepan, combine quince, sugar, orange juice, mint, pistachios, and salt.
- Cook over medium heat, stirring occasionally, until the mixture thickens slightly, about 10-12 minutes.
- Remove from heat and let cool to room temperature.
To Serve:
- Slice the cooked lamb chops against the grain.
- Serve with a dollop of quince relish spooned on top.
- Garnish with additional mint leaves if desired.
