Saffron Crusted Lamb Chops with Quince and Pistachio Relish

Ingredients:

For the Lamb:

  • 4 lamb chops (1-1.5 inches thick)
  • 2 tablespoons saffron threads, soaked in 2 tablespoons hot water
  • 1 tablespoon olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • Salt and black pepper

For the Quince Relish:

  • 2 quinces, peeled and grated
  • 1/4 cup granulated sugar
  • 2 tablespoons freshly squeezed orange juice
  • 1 tablespoon chopped fresh mint
  • 1/4 cup chopped pistachios
  • Salt to taste

Instructions:

To Make the Lamb Chops:

  1. Preheat the oven to 400°F (200°C).
  2. In a small bowl, mix together saffron and its soaking liquid, olive oil, cumin, smoked paprika, salt, and black pepper.
  3. Rub the mixture all over the lamb chops, making sure they are evenly coated.
  4. Place the lamb chops on a baking sheet lined with parchment paper and bake for 15-20 minutes or until cooked to your desired level of doneness.

To Make the Quince Relish:

  1. In a medium saucepan, combine quince, sugar, orange juice, mint, pistachios, and salt.
  2. Cook over medium heat, stirring occasionally, until the mixture thickens slightly, about 10-12 minutes.
  3. Remove from heat and let cool to room temperature.

To Serve:

  1. Slice the cooked lamb chops against the grain.
  2. Serve with a dollop of quince relish spooned on top.
  3. Garnish with additional mint leaves if desired.
