Saffron Crème Brûlée Stuffed Cardamom Donuts
Servings: 12 donuts
Ingredients:
- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/4 teaspoon salt
- 1/4 teaspoon ground cardamom
- 1/2 cup whole milk
- 2 large eggs
- 2 tablespoons unsalted butter, melted
- Saffron Crème Brûlée Filling (see below)
- Cardamom Sugar Topping (see below)
Instructions:
Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
In a medium bowl, whisk together flour, sugar, salt, and cardamom. Add milk, eggs, and melted butter; mix until a smooth batter forms.
Transfer the dough to a piping bag fitted with a large round tip. Pipe into 12 equal-sized rings onto the prepared baking sheet.
Bake for 18-20 minutes or until golden brown. Allow donuts to cool completely on a wire rack.
To fill, use a cookie scoop to remove a portion of each cooled donut. Fill with Saffron Crème Brûlée Filling and top with Cardamom Sugar Topping before serving.
Saffron Crème Brûlée Filling:
- 1 cup heavy cream
- 2 tablespoons unsalted butter, softened
- 2 tablespoons granulated sugar
- 1/4 teaspoon saffron threads, soaked in 1 tablespoon hot water
Mix all ingredients until the sugar has dissolved and the mixture is smooth. Refrigerate for at least 30 minutes before using.
Cardamom Sugar Topping:
- 1/4 cup granulated sugar
- 1/4 teaspoon ground cardamom
Mix both ingredients together and sprinkle on top of donuts just before serving.
Note: To soak saffron threads, simply add them to a small bowl and pour hot water over them. Let it sit for about 10 minutes or until the liquid turns a vibrant yellow color. This is where the magic happens!
