Roasted Salmon with Lemon-Basil Salsa Verde

A vibrant and flavorful dish featuring perfectly roasted salmon topped with a zesty lemon-basil salsa verde.

Ingredients:

  • 2 salmon filets (about 6 ounces each)
  • 1 tablespoon olive oil
  • Salt and freshly ground black pepper to taste
  • 1/4 cup fresh basil leaves, packed
  • 1/4 cup chopped fresh parsley
  • 1/4 cup thinly sliced red onion
  • 2 tablespoons lemon juice
  • 1 clove garlic, minced
  • 1 tablespoon capers, drained
  • Pinch of red pepper flakes (optional)

Instructions:

  1. Preheat oven to 400 degrees F (200 degrees C).
  2. Season the salmon filets with salt and black pepper. Drizzle with olive oil and place on a baking sheet lined with parchment paper.
  3. Roast for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.
  4. While the salmon is roasting, combine the basil, parsley, red onion, lemon juice, garlic, capers, and red pepper flakes (if using) in a small bowl. Season with salt and pepper to taste.
  5. Serve the roasted salmon topped with the vibrant lemon-basil salsa verde.
