Ingredients:
- 2 salmon filets (about 6 ounces each)
- 1 tablespoon olive oil
- Salt and freshly ground black pepper to taste
- 1/4 cup fresh basil leaves, packed
- 1/4 cup chopped fresh parsley
- 1/4 cup thinly sliced red onion
- 2 tablespoons lemon juice
- 1 clove garlic, minced
- 1 tablespoon capers, drained
- Pinch of red pepper flakes (optional)
Instructions:
- Preheat oven to 400 degrees F (200 degrees C).
- Season the salmon filets with salt and black pepper. Drizzle with olive oil and place on a baking sheet lined with parchment paper.
- Roast for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.
- While the salmon is roasting, combine the basil, parsley, red onion, lemon juice, garlic, capers, and red pepper flakes (if using) in a small bowl. Season with salt and pepper to taste.
- Serve the roasted salmon topped with the vibrant lemon-basil salsa verde.
