Ingredients:
- 2 salmon fillets (about 6 oz each)
- 1 tablespoon olive oil
- 1 teaspoon grated ginger
- 1 tablespoon honey
- 1/2 tablespoon soy sauce
- 1/4 teaspoon black pepper
- 1 bunch spinach
- 1 tablespoon sesame seeds
- 1 tablespoon toasted sesame oil
Instructions:
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
In a small bowl, whisk together olive oil, ginger, honey, soy sauce, and black pepper.
Place salmon fillets on the prepared baking sheet and pour the glaze over them, coating evenly.
Bake for 12-15 minutes, or until salmon is cooked through and flakes easily with a fork.
While the salmon bakes, heat sesame oil in a skillet over medium heat. Add spinach and cook until wilted, about 2-3 minutes. Stir in sesame seeds.
Serve roasted salmon topped with sesame greens.
