Raspberry and White Chocolate Tiramisu Cheesecake Bars
Ingredients
- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 6 tablespoons unsalted butter, melted
- 16 ounces cream cheese, softened
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 cup white chocolate chips
- 1 cup fresh raspberries
- 1 cup mascarpone cheese
- 2 tablespoons unsweetened cocoa powder
- 1 cup confectioners' sugar
Instructions
Prepare the crust
- In a medium bowl, mix together the graham cracker crumbs and sugar.
- Stir in the melted butter until well combined.
- Press the mixture into the bottom of a 9x13-inch baking dish.
Make the cheesecake batter
- In a large mixing bowl, beat the cream cheese until smooth.
- Add the eggs one at a time, beating well after each addition.
- Stir in the vanilla extract and white chocolate chips.
- Melt the raspberries by microwaving them for 10-15 seconds.
- Fold the melted raspberries into the cheesecake batter.
Prepare the tiramisu mixture
- In a separate bowl, whip the mascarpone cheese until stiff peaks form.
- Add the cocoa powder and confectioners' sugar to the whipped cream.
- Stir in the melted white chocolate chips.
Assemble the bars
- Pour the cheesecake batter over the crust.
- Dollop the tiramisu mixture on top of the cheesecake batter.
- Repeat this process two more times, ending with a layer of cheesecake batter.
Bake and chill
- Bake at 325°F for 40-45 minutes or until set.
- Let cool completely in the pan.
- Chill in the refrigerator for at least 4 hours before serving.
Notes
- The tiramisu mixture will be quite light, but it will help to stabilize the cheesecake layers.
- You can adjust the amount of raspberries and white chocolate chips to your liking.
- These bars are perfect for a fancy dessert or special occasion.
