Raspberry and White Chocolate Tiramisu
Ingredients
- 12-16 ladyfingers
- 1 cup of strong brewed coffee
- 8 oz mascarpone cheese
- 1/2 cup granulated sugar
- 2 large egg yolks
- 1 tsp vanilla extract
- 1 cup fresh raspberries
- 1 cup white chocolate chips
- Confectioners' sugar, for dusting
Instructions
Step 1: Prepare the Coffee Syrup
In a small saucepan, combine the coffee and granulated sugar. Heat over low heat, stirring until the sugar dissolves. Let cool to room temperature.
Step 2: Dip the Ladyfingers
Dip each ladyfinger into the coffee syrup for about 3-5 seconds on each side. They should be soft and pliable but not too wet.
Step 3: Prepare the Mascarpone Mixture
In a medium bowl, combine the mascarpone cheese, egg yolks, and vanilla extract. Beat with an electric mixer until smooth.
Step 4: Assemble the Tiramisu
In a large serving dish, create a layer of ladyfingers. You may need to trim them to fit the dish. Spread half of the mascarpone mixture over the ladyfingers. Sprinkle half of the white chocolate chips over the mascarpone mixture. Repeat the layers: ladyfingers, mascarpone mixture, and white chocolate chips.
Step 5: Top with Raspberries
Top the white chocolate layer with fresh raspberries.
Step 6: Dust with Confectioners' Sugar
Dust the top of the tiramisu with confectioners' sugar.
Step 7: Chill and Serve
Refrigerate for at least 3 hours or overnight. Slice and serve.
