Raspberry and White Chocolate Macadamia Nut Crumble Bars
Ingredients
- 2 cups fresh raspberries
- 1 cup granulated sugar
- 2 tbsp cornstarch
- 1 tsp vanilla extract
- 1/4 cup white chocolate chips
- 1/4 cup chopped macadamia nuts
- 1 cup all-purpose flour
- 1/2 cup packed brown sugar
- 1/2 cup cold unsalted butter, cut into small pieces
Instructions
Preheat Oven and Prepare Crust
Preheat oven to 375°F (190°C). In a medium bowl, whisk together the flour and brown sugar. Add the cold butter and use a pastry blender or your fingers to work it into the dry ingredients until mixture resembles coarse crumbs.
Prepare Filling
In a separate bowl, mix together raspberries, granulated sugar, cornstarch, and vanilla extract.
Assemble Crumble Bars
Transfer the crust mixture to a 9x9 inch baking dish. Top with raspberry filling and spread evenly.
Prepare Topping
Melt white chocolate chips in a microwave-safe bowl at 30-second intervals until smooth. Stir in chopped macadamia nuts. Spread over the raspberry filling.
Bake Crumble Bars
Bake for 40-45 minutes, or until topping is golden brown and crust is cooked through.
Cool and Serve
Let cool on a wire rack before cutting into bars and serving. Enjoy!
