Raspberry and White Chocolate Crumble Bars
Ingredients:
- 2 1/4 cups all-purpose flour
- 1 cup granulated sugar
- 1 tsp baking powder
- 1/2 tsp salt
- 1 cup cold unsalted butter, cut into small pieces
- 2 large eggs
- 2 tsp vanilla extract
- 2 cups fresh raspberries
- 1 cup white chocolate chips
Instructions:
For the Crust:
- Preheat oven to 375°F (190°C). Line an 8-inch square baking dish with parchment paper.
- In a medium bowl, whisk together flour, sugar, baking powder, and salt.
- Add cold butter; use a pastry blender or your fingers to work it into the dry ingredients until mixture resembles coarse crumbs.
- Press mixture evenly into prepared baking dish.
For the Filling:
- In a separate bowl, whisk together eggs and vanilla extract.
- Gently fold in fresh raspberries.
- Pour raspberry mixture over crust.
For the Topping:
- Melt white chocolate chips in a double boiler or in the microwave in 30-second increments, stirring between each interval until smooth.
- Spread melted white chocolate evenly over filling.
Baking and Cooling:
- Bake for 40-45 minutes or until topping is set and crust is golden brown.
- Remove from oven; let cool completely on a wire rack.
Serving Suggestion:
Cut into bars and serve warm, topped with vanilla ice cream if desired.
