Raspberry and White Chocolate Crumble Bars

A sweet and tangy twist on the classic apple crumble, featuring fresh raspberries and white chocolate.

Raspberry and White Chocolate Crumble Bars

Ingredients:

  • 2 1/4 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 cup cold unsalted butter, cut into small pieces
  • 2 large eggs
  • 2 tsp vanilla extract
  • 2 cups fresh raspberries
  • 1 cup white chocolate chips

Instructions:

For the Crust:

  1. Preheat oven to 375°F (190°C). Line an 8-inch square baking dish with parchment paper.
  2. In a medium bowl, whisk together flour, sugar, baking powder, and salt.
  3. Add cold butter; use a pastry blender or your fingers to work it into the dry ingredients until mixture resembles coarse crumbs.
  4. Press mixture evenly into prepared baking dish.

For the Filling:

  1. In a separate bowl, whisk together eggs and vanilla extract.
  2. Gently fold in fresh raspberries.
  3. Pour raspberry mixture over crust.

For the Topping:

  1. Melt white chocolate chips in a double boiler or in the microwave in 30-second increments, stirring between each interval until smooth.
  2. Spread melted white chocolate evenly over filling.

Baking and Cooling:

  1. Bake for 40-45 minutes or until topping is set and crust is golden brown.
  2. Remove from oven; let cool completely on a wire rack.

Serving Suggestion:

Cut into bars and serve warm, topped with vanilla ice cream if desired.
