A twist on traditional apple crumble, these bars combine fresh raspberries and almonds for a sweet and crunchy dessert.

Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1/2 cup unsalted butter, chilled and cut into small pieces
  • 1 cup fresh raspberries
  • 1/4 cup sliced almonds

Instructions

  1. Preheat the oven to 375°F (190°C). Line an 8-inch square baking dish with parchment paper.
  2. In a medium bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, and salt.
  3. Add the cold butter and use a pastry blender or your fingers to work it into the dry ingredients until the mixture resembles coarse crumbs.
  4. Press the crumb mixture evenly into the prepared baking dish.
  5. In a separate bowl, toss the fresh raspberries with 2 tablespoons granulated sugar.
  6. Arrange the raspberry mixture on top of the crumb crust in an even layer.
  7. Sprinkle the sliced almonds over the raspberry layer.
  8. Bake for 40-45 minutes or until the crumble topping is golden brown and the fruit is tender.
  9. Remove from the oven and let cool completely before slicing into bars.
