Description

These crumbly bars are packed with fresh raspberries and melted white chocolate. The perfect combination of sweet and tangy, they're sure to become a new favorite dessert.

Ingredients

Crust

  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 cup unsalted butter, softened
  • 1 teaspoon vanilla extract

Filling

  • 1 cup fresh raspberries
  • 1/2 cup granulated sugar
  • 2 tablespoons cornstarch
  • 2 tablespoons white chocolate chips

Topping

  • 1/2 cup rolled oats
  • 1/4 cup brown sugar
  • 1/2 cup chopped pecans (optional)

Instructions

  1. Preheat your oven to 375°F (190°C). Line an 8-inch square baking dish with parchment paper.
  2. In a medium bowl, whisk together the flour, granulated sugar, and salt. Add the softened butter and vanilla extract; mix until crumbly.
  3. Press the crust mixture evenly into the prepared baking dish.
  4. Bake for 20-25 minutes or until lightly golden brown. Allow it to cool completely.
  5. In a separate bowl, whisk together the fresh raspberries and granulated sugar. Add the cornstarch and mix well.
  6. Spread the raspberry mixture evenly over the cooled crust layer.
  7. Melt the white chocolate chips in a double boiler or in the microwave in 30-second increments, stirring between each interval until smooth.
  8. Pour the melted white chocolate over the raspberries.
  9. In another bowl, mix together the rolled oats, brown sugar, and chopped pecans (if using). Sprinkle this mixture evenly over the top of the white chocolate layer.
  10. Bake for an additional 25-30 minutes or until the topping is golden brown.

Tips

  • For a crisper crust, bake it for an extra 5-7 minutes.
  • If using fresh raspberries, make sure to wash and dry them before using.
  • The best way to melt white chocolate is by double boiler.
