Raspberry White Chocolate Crumble Bars

Ingredients
Crust
- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1/4 cup unsalted butter, softened
- 1 teaspoon vanilla extract
Filling
- 1 cup fresh raspberries
- 1/2 cup granulated sugar
- 2 tablespoons cornstarch
- 2 tablespoons white chocolate chips
Topping
- 1/2 cup rolled oats
- 1/4 cup brown sugar
- 1/2 cup chopped pecans (optional)
Instructions
- Preheat your oven to 375°F (190°C). Line an 8-inch square baking dish with parchment paper.
- In a medium bowl, whisk together the flour, granulated sugar, and salt. Add the softened butter and vanilla extract; mix until crumbly.
- Press the crust mixture evenly into the prepared baking dish.
- Bake for 20-25 minutes or until lightly golden brown. Allow it to cool completely.
- In a separate bowl, whisk together the fresh raspberries and granulated sugar. Add the cornstarch and mix well.
- Spread the raspberry mixture evenly over the cooled crust layer.
- Melt the white chocolate chips in a double boiler or in the microwave in 30-second increments, stirring between each interval until smooth.
- Pour the melted white chocolate over the raspberries.
- In another bowl, mix together the rolled oats, brown sugar, and chopped pecans (if using). Sprinkle this mixture evenly over the top of the white chocolate layer.
- Bake for an additional 25-30 minutes or until the topping is golden brown.
Tips
- For a crisper crust, bake it for an extra 5-7 minutes.
- If using fresh raspberries, make sure to wash and dry them before using.
- The best way to melt white chocolate is by double boiler.
