Ingredients
For the Pastry Dough
- 1 cup (2 sticks) unsalted butter, softened
- 1/2 cup granulated sugar
- 4 large eggs
- 3 cups all-purpose flour
- 1 teaspoon salt
- 1 tablespoon water
For the Raspberry Tiramisu Cream
- 8 ounces mascarpone cheese
- 1/2 cup granulated sugar
- 2 tablespoons unsweetened raspberry puree
- 2 tablespoons coffee liqueur (such as Kahlúa)
- 2 tablespoons rum or other liquor of choice (optional)
For the Ladyfingers
- 12-16 ladyfingers
- 1 cup strong brewed coffee
- 1 tablespoon unsweetened raspberry syrup
- 1 tablespoon sugar
Instructions
Preparing the Pastry Dough
- In a medium bowl, combine the flour and salt.
- Add the softened butter to the flour mixture and mix until it resembles coarse crumbs.
- Gradually add the water while mixing with a fork until the dough comes together in a ball.
Preparing the Raspberry Tiramisu Cream
- In a separate medium bowl, whip the mascarpone cheese until smooth.
- Add the granulated sugar, raspberry puree, coffee liqueur, and rum (if using) to the whipped mascarpone and mix well.
Assembling the Puffs
- Roll out the pastry dough on a lightly floured surface to about 1/4 inch thickness.
- Cut out circles of pastry dough using a cookie cutter or a glass.
- Spoon a small amount of raspberry tiramisu cream onto one half of each dough circle, leaving a 1-inch border around the edges.
- Fold the other half of the dough over the filling to form a triangle and press the edges together with a fork to seal.
Serving
- Dust the cream puffs lightly with confectioners' sugar before serving.
- Place the raspberry tiramisu cream puff on top of a serving plate or tray, garnished with fresh raspberries and whipped cream (optional).
