Raspberry Panna Cotta Tiramisu Bars

A creamy and fruity twist on traditional tiramisu bars, featuring raspberry panna cotta layers.

Raspberry Panna Cotta Tiramisu Bars

Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1/4 cup unsalted butter, softened
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 8 ounces mascarpone cheese
  • 1 cup heavy cream
  • 2 cups raspberry jam
  • 1 cup chopped fresh raspberries

Instructions:

Tiramisu Layer

  1. Preheat the oven to 350°F (180°C). Line an 8-inch square baking dish with parchment paper.
  2. In a medium bowl, whisk together flour, sugar, baking powder, and salt. Add softened butter and mix until a dough forms.
  3. Press the dough evenly into the prepared baking dish.
  4. Bake for 20-25 minutes or until lightly golden brown.
  5. Allow the cake to cool completely in the pan.

Panna Cotta Layer

  1. In a blender, combine mascarpone cheese, heavy cream, and granulated sugar. Blend until smooth and creamy.
  2. Stir in vanilla extract.
  3. Pour the panna cotta mixture over the cooled tiramisu layer.
  4. Refrigerate for at least 4 hours or overnight.

Raspberry Layer

  1. In a small saucepan, heat the raspberry jam over low heat until warm and syrupy.
  2. Spread the warm jam evenly over the panna cotta layer.
  3. Top with chopped fresh raspberries.

Serving:

  1. Cut into bars and serve chilled.

Note: These bars are best served within 24 hours of assembly.
