Raspberry Panna Cotta Tiramisu Bars
Ingredients:
- 1 1/2 cups all-purpose flour
- 1 cup granulated sugar
- 2 teaspoons baking powder
- 1 teaspoon salt
- 1/4 cup unsalted butter, softened
- 1 large egg
- 2 teaspoons vanilla extract
- 8 ounces mascarpone cheese
- 1 cup heavy cream
- 2 cups raspberry jam
- 1 cup chopped fresh raspberries
Instructions:
Tiramisu Layer
- Preheat the oven to 350°F (180°C). Line an 8-inch square baking dish with parchment paper.
- In a medium bowl, whisk together flour, sugar, baking powder, and salt. Add softened butter and mix until a dough forms.
- Press the dough evenly into the prepared baking dish.
- Bake for 20-25 minutes or until lightly golden brown.
- Allow the cake to cool completely in the pan.
Panna Cotta Layer
- In a blender, combine mascarpone cheese, heavy cream, and granulated sugar. Blend until smooth and creamy.
- Stir in vanilla extract.
- Pour the panna cotta mixture over the cooled tiramisu layer.
- Refrigerate for at least 4 hours or overnight.
Raspberry Layer
- In a small saucepan, heat the raspberry jam over low heat until warm and syrupy.
- Spread the warm jam evenly over the panna cotta layer.
- Top with chopped fresh raspberries.
Serving:
- Cut into bars and serve chilled.
Note: These bars are best served within 24 hours of assembly.
