Raspberry Panna Cotta Tartlets with Caramelized Sugar Crust
Ingredients
- For the crust:
- 1 cup granulated sugar
- 2 tablespoons unsalted butter, softened
- For the panna cotta:
- 1 cup heavy cream
- 1/2 cup whole milk
- 1 tablespoon vanilla extract
- 1/4 cup granulated sugar
- 8 ounces cream cheese, softened
- 1 cup fresh raspberries

Instructions
Caramelized Sugar Crust
- Preheat the oven to 350°F (175°C).
- In a medium saucepan, combine the sugar and butter.
- Place the saucepan over low heat and stir until the sugar has dissolved.
- Increase the heat to medium-high and bring the mixture to a boil.
- Reduce the heat to medium-low and simmer for about 10-12 minutes or until the caramelized sugar is golden brown.
- Allow the caramelized sugar to cool slightly.
Panna Cotta
- In a medium saucepan, combine the heavy cream, whole milk, vanilla extract, and granulated sugar.
- Heat the mixture over medium heat, stirring occasionally, until the sugar has dissolved and the mixture is hot but not boiling.
- Remove the saucepan from the heat and let it steep for about 10-15 minutes to allow the flavors to meld together.
- In a blender or food processor, combine the cream cheese, heavy cream mixture, and vanilla extract.
- Blend until smooth and creamy.
Assembly
- Preheat the oven to 350°F (175°C).
- Roll out the pastry dough on a lightly floured surface to about 1/4-inch thickness.
- Cut out circles of pastry using a cookie cutter or the rim of a glass.
- Place a spoonful of caramelized sugar in the center of each pastry circle.
- Spoon a small amount of panna cotta mixture on top of the caramelized sugar.
- Top with fresh raspberries and fold the pastry over to form a triangle or a square shape, depending on your preference.
- Place the tartlets on a baking sheet lined with parchment paper and refrigerate for at least 30 minutes to allow the flavors to meld together.
- Serve chilled, garnished with additional fresh raspberries and whipped cream if desired.
