Raspberry Panna Cotta Cake Roll with Strawberry Sauce
Ingredients:
For the cake:
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 3 large eggs, at room temperature
- 2 teaspoons baking powder
- 1 teaspoon salt
- 1/2 cup whole milk
- 1/4 cup vegetable oil
- 1 teaspoon vanilla extract
For the panna cotta:
- 1 cup heavy cream
- 1/2 cup granulated sugar
- 2 tablespoons cornstarch
- 1/4 cup raspberry jam
- 1 tablespoon unsalted butter, softened
For the strawberry sauce:
- 1 cup hulled and sliced strawberries
- 2 tablespoons granulated sugar
- 1 tablespoon lemon juice
Instructions:
Prepare the cake:
- Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
- In a medium bowl, whisk together flour, sugar, baking powder, and salt.
- In a large bowl, whisk together milk, oil, and vanilla extract.
- Add the dry ingredients to the wet ingredients and mix until just combined.
- Pour the batter onto the prepared baking sheet and smooth out the top.
Bake the cake:
- Bake for 12-15 minutes or until the cake is golden brown and springs back when touched.

- In a small bowl, mix together sliced strawberries, granulated sugar, and lemon juice.
- Let it sit at room temperature for 15-20 minutes to allow the flavors to meld.

- Slice the cake roll into thick slices.
- Drizzle the strawberry sauce over each slice of cake.
