Raspberry Panna Cotta Cake Roll with Strawberry Sauce

Ingredients:

For the cake:

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 3 large eggs, at room temperature
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1/2 cup whole milk
  • 1/4 cup vegetable oil
  • 1 teaspoon vanilla extract

For the panna cotta:

  • 1 cup heavy cream
  • 1/2 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1/4 cup raspberry jam
  • 1 tablespoon unsalted butter, softened

For the strawberry sauce:

  • 1 cup hulled and sliced strawberries
  • 2 tablespoons granulated sugar
  • 1 tablespoon lemon juice

Instructions:

Prepare the cake:

  1. Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together flour, sugar, baking powder, and salt.
  3. In a large bowl, whisk together milk, oil, and vanilla extract.
  4. Add the dry ingredients to the wet ingredients and mix until just combined.
  5. Pour the batter onto the prepared baking sheet and smooth out the top.

Bake the cake:

  1. Bake for 12-15 minutes or until the cake is golden brown and springs back when touched.
  2. Allow the cake to cool in the pan for 5 minutes, then transfer it to a wire rack to cool completely.

Prepare the panna cotta:

  1. In a small saucepan, combine heavy cream, sugar, and cornstarch. Whisk until the mixture is smooth.
  2. Cook over medium heat, stirring constantly, until the mixture thickens.
  3. Remove from heat and stir in raspberry jam and softened butter.

Assemble the cake roll:

  1. Once the cake is completely cool, spread the panna cotta mixture evenly over the top of the cake.
  2. Roll the cake tightly into a log shape.
  3. Place the rolled cake on a serving plate or tray.

Prepare the strawberry sauce:

  1. In a small bowl, mix together sliced strawberries, granulated sugar, and lemon juice.
  2. Let it sit at room temperature for 15-20 minutes to allow the flavors to meld.

Serve:

  1. Slice the cake roll into thick slices.
  2. Drizzle the strawberry sauce over each slice of cake.
  3. Garnish with fresh berries and serve immediately.
