Raspberry Oatmeal Crumble Bars

A twist on traditional oatmeal crumble, these bars feature a sweet raspberry filling and a crunchy oat topping.

Raspberry Oatmeal Crumble Bars

Servings: 12-15 Prep Time: 20 minutes Cook Time: 35 minutes Total Time: 55 minutes

Ingredients:

  • 2 cups all-purpose flour
  • 1 cup rolled oats
  • 1/2 cup packed brown sugar
  • 1/2 cup granulated sugar
  • 1/4 cup cold unsalted butter, cut into small pieces
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1/2 cup fresh raspberries
  • 2 tablespoons cornstarch

Instructions:

  1. Preheat your oven to 375°F (190°C). Line an 8-inch square baking dish with parchment paper.
  2. In a medium bowl, whisk together the flour, oats, brown sugar, granulated sugar, and salt.
  3. Add the cold butter to the dry ingredients and use a pastry blender or your fingers to work it into the mixture until it resembles coarse crumbs.
  4. Press half of the crumb mixture into the prepared baking dish.
  5. In a separate bowl, whisk together the fresh raspberries and cornstarch. Spread the raspberry mixture over the crust.
  6. Top with the remaining crumb mixture, spreading evenly to cover the filling.
  7. Bake for 35-40 minutes or until the top is golden brown and the filling is bubbly.
  8. Allow the bars to cool completely in the pan before cutting into squares.

Notes:

  • You can use frozen raspberries if fresh ones are not available.
  • These bars are perfect for a quick dessert or snack, and they're also great for potlucks or picnics.
  • Store any leftovers in an airtight container at room temperature for up to 3 days.
