Raspberry Oatmeal Crumble Bars

Ingredients:
- 2 cups all-purpose flour
- 1 cup rolled oats
- 1/2 cup packed brown sugar
- 1/2 cup granulated sugar
- 1/4 cup cold unsalted butter, cut into small pieces
- 2 teaspoons baking powder
- 1 teaspoon salt
- 1/2 cup fresh raspberries
- 2 tablespoons cornstarch
Instructions:
- Preheat your oven to 375°F (190°C). Line an 8-inch square baking dish with parchment paper.
- In a medium bowl, whisk together the flour, oats, brown sugar, granulated sugar, and salt.
- Add the cold butter to the dry ingredients and use a pastry blender or your fingers to work it into the mixture until it resembles coarse crumbs.
- Press half of the crumb mixture into the prepared baking dish.
- In a separate bowl, whisk together the fresh raspberries and cornstarch. Spread the raspberry mixture over the crust.
- Top with the remaining crumb mixture, spreading evenly to cover the filling.
- Bake for 35-40 minutes or until the top is golden brown and the filling is bubbly.
- Allow the bars to cool completely in the pan before cutting into squares.
Notes:
- You can use frozen raspberries if fresh ones are not available.
- These bars are perfect for a quick dessert or snack, and they're also great for potlucks or picnics.
- Store any leftovers in an airtight container at room temperature for up to 3 days.
