Ingredients
For the Brownies
- 1 cup (200g) dark chocolate chips
- 1/2 cup (100g) unsalted butter, at room temperature
- 1 cup (200g) granulated sugar
- 4 large eggs
- 1 teaspoon vanilla extract
- 1 1/4 cups (160g) all-purpose flour
- 1/2 teaspoon salt
For the Raspberry Mousse
- 1 cup (120g) fresh raspberries
- 1 tablespoon granulated sugar
- 2 tablespoons unsalted butter, softened
- 2 ounces (60g) white chocolate chips
- 1/4 cup (30g) confectioners' sugar
Instructions
Make the Brownies
- Preheat oven to 350°F (180°C). Line an 8-inch square baking pan with parchment paper.
- In a medium bowl, whisk together flour and salt; set aside.
- In a large bowl, using an electric mixer, beat together butter and sugar until light and fluffy. Beat in eggs one at a time.
- Melt chocolate chips in a double boiler or in the microwave in 30-second increments, stirring between each interval until smooth.
- Beat melted chocolate into the sugar mixture until well combined.
- Stir in flour mixture until just combined.
- Pour batter into prepared pan and bake for 25 minutes or until a toothpick inserted comes out with a few moist crumbs.
- Allow brownies to cool completely in the pan.
Make the Raspberry Mousse
- In a blender or food processor, puree raspberries and granulated sugar until smooth. Strain mixture through a fine-mesh sieve into a bowl; discard solids.
- Whip softened butter with white chocolate chips until light and fluffy.
- Fold whipped cream into raspberry puree until well combined.
Assemble the Brownies
- Cut cooled brownies into 12 equal pieces.
- Spoon about 1 tablespoon of raspberry mousse onto one half of each brownie square.
- Top with another brownie square to create a sandwich.
- Dust tops with confectioners' sugar before serving.
