Ingredients

For the Brownies

  • 1 cup (200g) dark chocolate chips
  • 1/2 cup (100g) unsalted butter, at room temperature
  • 1 cup (200g) granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/4 cups (160g) all-purpose flour
  • 1/2 teaspoon salt

For the Raspberry Mousse

  • 1 cup (120g) fresh raspberries
  • 1 tablespoon granulated sugar
  • 2 tablespoons unsalted butter, softened
  • 2 ounces (60g) white chocolate chips
  • 1/4 cup (30g) confectioners' sugar

Instructions

Make the Brownies

  1. Preheat oven to 350°F (180°C). Line an 8-inch square baking pan with parchment paper.
  2. In a medium bowl, whisk together flour and salt; set aside.
  3. In a large bowl, using an electric mixer, beat together butter and sugar until light and fluffy. Beat in eggs one at a time.
  4. Melt chocolate chips in a double boiler or in the microwave in 30-second increments, stirring between each interval until smooth.
  5. Beat melted chocolate into the sugar mixture until well combined.
  6. Stir in flour mixture until just combined.
  7. Pour batter into prepared pan and bake for 25 minutes or until a toothpick inserted comes out with a few moist crumbs.
  8. Allow brownies to cool completely in the pan.

Make the Raspberry Mousse

  1. In a blender or food processor, puree raspberries and granulated sugar until smooth. Strain mixture through a fine-mesh sieve into a bowl; discard solids.
  2. Whip softened butter with white chocolate chips until light and fluffy.
  3. Fold whipped cream into raspberry puree until well combined.

Assemble the Brownies

  1. Cut cooled brownies into 12 equal pieces.
  2. Spoon about 1 tablespoon of raspberry mousse onto one half of each brownie square.
  3. Top with another brownie square to create a sandwich.
  4. Dust tops with confectioners' sugar before serving.
