Raspberry Chocolate Tres Leches Cake

Moist and decadent tres leches cake infused with the flavors of raspberries and dark chocolate.

Servings 8-10 people

Ingredients:

  • 2 1/4 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 cup unsalted butter, softened
  • 3 large eggs
  • 2 teaspoons pure vanilla extract
  • 1 cup whole milk
  • 1 cup heavy cream
  • 1 cup evaporated milk
  • 1 cup dark chocolate chips (at least 60% cocoa)
  • 1 cup fresh raspberries

Instructions:

  1. Preheat the oven to 350°F (180°C). Grease a 9x13-inch baking dish and set it aside.
  2. In a medium bowl, whisk together the flour, sugar, baking powder, and salt.
  3. In a large mixing bowl, use an electric mixer to beat the butter until creamy, about 2 minutes. Add the eggs one at a time, beating well after each addition. Beat in the vanilla extract.
  4. Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the dry ingredients. Beat just until combined.
  5. Melt the chocolate chips in a double boiler or in the microwave in 30-second increments, stirring between each interval until smooth. Allow the chocolate to cool slightly.
  6. Pour half of the cake batter into the prepared baking dish. Drizzle the melted chocolate over the batter, then sprinkle with fresh raspberries.
  7. Pour the remaining cake batter over the raspberries and smooth the top.
  8. Bake for 35-40 minutes or until a toothpick inserted in the center comes out clean.
  9. Remove from the oven and let cool for 10 minutes before piercing the top of the cake with a skewer to allow the tres leches mixture to absorb.
  10. In a large measuring cup, whisk together the heavy cream, evaporated milk, and granulated sugar. Pour the tres leches mixture over the warm cake, making sure each piece of cake is saturated with the liquid.
  11. Cover the dish with plastic wrap and refrigerate for at least 2 hours or overnight.
  12. Before serving, garnish with additional fresh raspberries and whipped cream if desired.
