Ingredients

For the crust:

  • 1 1/2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1/4 cup unsweetened cocoa powder
  • 1/2 teaspoon salt
  • 1/2 cup cold unsalted butter, cut into small pieces

For the filling:

  • 12-16 ladyfingers
  • 1 cup strong brewed coffee
  • 8 ounces mascarpone cheese
  • 1/2 cup granulated sugar
  • 2 large egg yolks
  • 1 teaspoon vanilla extract
  • 1 cup fresh raspberries

For the crumble topping:

  • 1/4 cup packed light brown sugar
  • 1/4 cup all-purpose flour
  • 1/4 cup unsweetened cocoa powder
  • 1/2 cup cold unsalted butter, cut into small pieces
  • 1 cup semisweet chocolate chips

Instructions

Prepare the crust:

  1. Preheat your oven to 350°F (180°C). Line an 8-inch square baking dish with parchment paper.
  2. In a medium bowl, whisk together flour, sugar, cocoa powder, and salt. Add cold butter; use a pastry blender or your fingertips to work it into the dry ingredients until the mixture resembles coarse crumbs.
  3. Press the crust mixture evenly into the prepared baking dish.

Prepare the filling:

  1. Dip each ladyfinger into the coffee for about 3-5 seconds on each side. They should be soft and pliable but not too wet.
  2. In a large bowl, combine mascarpone cheese, granulated sugar, egg yolks, and vanilla extract. Beat with an electric mixer until smooth and creamy.
  3. Fold in fresh raspberries.

Assemble the dessert:

  1. Spread half of the mascarpone mixture over the prepared crust.
  2. Arrange half of the coffee-dipped ladyfingers on top of the filling.
  3. Repeat the layers: spread the remaining mascarpone mixture, followed by the remaining ladyfingers.

Prepare the crumble topping:

  1. In a medium bowl, whisk together brown sugar, flour, and cocoa powder. Add cold butter; use a pastry blender or your fingertips to work it into the dry ingredients until the mixture resembles coarse crumbs.
  2. Stir in chocolate chips.

Top with the crumble topping:

  1. Spread the crumble topping evenly over the top of the ladyfingers.
  2. Bake for 40-45 minutes, or until the crust is golden brown and the filling is set.

Serve
