- 1/2 teaspoon salt
- 1/2 cup cold unsalted butter, cut into small pieces
For the filling:
- 12-16 ladyfingers
- 1 cup strong brewed coffee
- 8 ounces mascarpone cheese

- 1 teaspoon vanilla extract
- 1 cup fresh raspberries
For the crumble topping:
- 1/4 cup packed light brown sugar
- 1/4 cup all-purpose flour
- 1/4 cup unsweetened cocoa powder
- 1/2 cup cold unsalted butter, cut into small pieces
- 1 cup semisweet chocolate chips
Instructions
Prepare the crust:
- Preheat your oven to 350°F (180°C). Line an 8-inch square baking dish with parchment paper.
- In a medium bowl, whisk together flour, sugar, cocoa powder, and salt. Add cold butter; use a pastry blender or your fingertips to work it into the dry ingredients until the mixture resembles coarse crumbs.
- Press the crust mixture evenly into the prepared baking dish.
Prepare the filling:
- Dip each ladyfinger into the coffee for about 3-5 seconds on each side. They should be soft and pliable but not too wet.
- In a large bowl, combine mascarpone cheese, granulated sugar, egg yolks, and vanilla extract. Beat with an electric mixer until smooth and creamy.
- Fold in fresh raspberries.
Assemble the dessert:
- Spread half of the mascarpone mixture over the prepared crust.
- Arrange half of the coffee-dipped ladyfingers on top of the filling.
- Repeat the layers: spread the remaining mascarpone mixture, followed by the remaining ladyfingers.
Prepare the crumble topping:
- In a medium bowl, whisk together brown sugar, flour, and cocoa powder. Add cold butter; use a pastry blender or your fingertips to work it into the dry ingredients until the mixture resembles coarse crumbs.
- Stir in chocolate chips.
Top with the crumble topping:
- Spread the crumble topping evenly over the top of the ladyfingers.
- Bake for 40-45 minutes, or until the crust is golden brown and the filling is set.
