Ingredients

  • 12-16 ladyfingers
  • 1 cup strong brewed coffee
  • 8 oz mascarpone cheese
  • 1/2 cup granulated sugar
  • 2 large egg yolks
  • 1 teaspoon vanilla extract
  • 1 cup raspberries, fresh or frozen
  • 1 cup dark chocolate chips (at least 70% cocoa)
  • Confectioners' sugar, for dusting

Instructions

Step 1: Prepare the Coffee Syrup

Combine the coffee and granulated sugar in a small bowl. Stir until the sugar dissolves.

Step 2: Dip the Ladyfingers

Dip each ladyfinger into the coffee syrup for about 3-5 seconds on each side. They should be soft and pliable but not too wet.

Step 3: Prepare the Mascarpone Mixture

In a medium bowl, whip the mascarpone cheese with an electric mixer until it becomes light and fluffy. Add the egg yolks one at a time, whipping well after each addition. Beat in the vanilla extract.

Step 4: Assemble the Tiramisu

In a large serving dish, create a layer of ladyfingers. You may need to trim some of them to fit the dish. Spread half of the mascarpone mixture over the ladyfingers. Top with half of the raspberries and half of the dark chocolate chips.

Step 5: Repeat the Layers

Repeat the layers, starting with the ladyfingers, then the mascarpone mixture, the remaining raspberries, and finally the last of the dark chocolate chips.

Step 6: Dust with Confectioners' Sugar

Dust the top of the tiramisu with confectioners' sugar. Cover with plastic wrap and refrigerate for at least 3 hours or overnight.

Variations

  • Use fresh raspberries for a more vibrant flavor and color.
  • Substitute other types of ladyfingers, such as Savoiardi or Malloreddus, for a different texture.
  • Omit the dark chocolate chips for a lighter dessert.
