Raspberry Chocolate Chip Crumble Bars
Ingredients:
- 2 1/4 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 1 cup packed brown sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 1 cup fresh raspberries
- 1 cup semisweet chocolate chips
- 1 cup rolled oats
- 1/2 cup light brown sugar
Instructions:
Preheat and Prepare the Crust
Preheat your oven to 375°F (190°C). Line an 8-inch square baking dish with parchment paper.
In a medium bowl, whisk together the flour, baking powder, and salt. Add the softened butter and mix until a crumbly dough forms. Press the dough evenly into the prepared baking dish.
Bake the Crust
Bake the crust for 20-25 minutes or until it's lightly golden brown.
Prepare the Filling
In a large bowl, whisk together the granulated sugar, brown sugar, eggs, and vanilla extract. Stir in the fresh raspberries and chocolate chips.
Assemble and Top the Bars
Spread the raspberry and chocolate filling evenly over the baked crust. In a small bowl, mix together the rolled oats and light brown sugar. Sprinkle the oat mixture evenly over the filling.
Bake and Cool
Bake for an additional 25-30 minutes or until the topping is golden brown and the filling is set. Allow the bars to cool completely in the baking dish before cutting into squares and serving.
