Raspberry Chocolate Chip Cookie Cake Bars
Ingredients:
- 2 1/4 cups all-purpose flour
- 1 tsp baking soda
- 1 tsp salt
- 1 cup unsalted butter, softened
- 3/4 cup white granulated sugar
- 1 cup brown sugar
- 2 large eggs
- 2 tsp vanilla extract
- 1 cup semi-sweet chocolate chips
- 1 cup fresh raspberries
Instructions:
- Preheat oven to 350°F (180°C). Line an 8-inch square baking dish with parchment paper.
- In a medium bowl, whisk together flour, baking soda, and salt.
- In a large bowl, use an electric mixer to cream butter and sugars until light and fluffy, about 2-3 minutes.
- Beat in eggs one at a time, followed by vanilla extract.
- Gradually mix in the dry ingredients until just combined, being careful not to overmix.
- Stir in chocolate chips and raspberries.
- Press dough evenly into prepared baking dish.
- Bake for 25-30 minutes or until edges are lightly golden brown.
- Let cool completely in pan before cutting into bars.
Variations:
- To make a cookie cake, bake for 35-40 minutes or until center is set.
- To add an extra layer of flavor, sprinkle a handful of fresh raspberries on top of the bars before baking.
