Introduction

Ingredients

For the cake:

  • 1 1/2 cups (190g) all-purpose flour
  • 1 cup (200g) granulated sugar
  • 3 large egg whites
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1/2 cup (115ml) whole milk, at room temperature
  • 2 tablespoons vegetable oil
  • 2 teaspoons pure vanilla extract

For the mousse:

  • 8 ounces (225g) fresh raspberries
  • 1 cup (200g) granulated sugar
  • 1/4 cup (60g) water
  • 1/4 cup (15g) chopped fresh basil leaves
  • 8 ounces (225g) heavy cream

For the whipped cream:

  • 2 cups (400g) heavy cream
  • 2 tablespoons granulated sugar

Instructions

Make the cake:

  1. Preheat your oven to 350°F (180°C). Grease two 9-inch (23cm) round cake pans and line the bottoms with parchment paper.
  2. In a medium bowl, whisk together flour, sugar, baking powder, and salt.
  3. In a large mixing bowl, whisk together milk, oil, and vanilla extract.
  4. Add the dry ingredients to the wet ingredients and mix until just combined.
  5. Divide the batter evenly between the prepared pans and smooth the tops.
  6. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.

Make the mousse:

  1. In a blender, puree the raspberries with granulated sugar, water, and chopped basil leaves until smooth.
  2. Strain the mixture through a fine-mesh sieve into a bowl to remove seeds.
  3. Whip the heavy cream until stiff peaks form.
  4. Fold the whipped cream into the raspberry mixture.

Assemble the cake:

  1. Once the cakes are completely cool, place one layer on a serving plate or cake stand.
  2. Spread the mousse over the top of the first cake layer.
  3. Place the second cake layer on top and dust with powdered sugar.
