Description:

This unique pie combines the sweetness of raspberries with the freshness of basil, topped with a crunchy crumble mixture. Perfect for warm weather and outdoor gatherings.

Ingredients:

For the Crust:

  • 2 cups all-purpose flour
  • 1/2 cup cold unsalted butter, cut into small pieces
  • 1/4 cup ice-cold water

Filling:

  • 2 cups fresh raspberries
  • 1/4 cup granulated sugar
  • 2 tablespoons chopped fresh basil
  • 2 tablespoons cornstarch

Crumble Topping:

  • 1 cup all-purpose flour
  • 1/2 cup rolled oats
  • 1/2 cup brown sugar
  • 1/2 cup cold unsalted butter, cut into small pieces
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. Make the crust: In a medium bowl, combine flour and salt. Add the cold butter and use a pastry blender or your fingers to work it into the flour until the mixture resembles coarse crumbs. Gradually add the ice-cold water, stirring with a fork until the dough comes together in a ball.
  3. Roll out the dough on a lightly floured surface to a thickness of about 1/8 inch (3 mm). Transfer the dough to a 9-inch pie dish and trim the edges to fit.
  4. Prepare the filling: In a separate bowl, combine raspberries, granulated sugar, basil, and cornstarch. Let it sit for about 15 minutes, until the berries start to release their juice and the mixture becomes syrupy.
  5. Fill the crust with the raspberry-basil mixture and spread it out evenly.

Crumble Topping Instructions:

  1. In a medium bowl, combine flour, oats, brown sugar, and salt. Add the cold butter and use your fingers or a pastry blender to work it into the dry ingredients until the mixture resembles coarse crumbs.
  2. Stir in the vanilla extract.
  3. Top the pie with the crumble mixture, spreading it evenly.

Baking:

  1. Bake the pie for 40-45 minutes, or until the crust is golden brown and the filling is bubbly.
  2. Rotate the pie halfway through baking to ensure even cooking.
  3. Allow the pie to cool on a wire rack for at least 30 minutes before serving.

Tips & Variations:

  • For an extra crunchy topping, sprinkle some chopped almonds or pistachios over the crumble mixture before baking.
  • If you prefer a stronger basil flavor, increase the amount of fresh basil in the filling by 1 tablespoon.
