Ingredients:
For the Crust:
- 2 cups all-purpose flour
- 1/2 cup cold unsalted butter, cut into small pieces
- 1/4 cup ice-cold water
Filling:
- 2 cups fresh raspberries
- 1/4 cup granulated sugar
- 2 tablespoons chopped fresh basil
- 2 tablespoons cornstarch
Crumble Topping:
- 1 cup all-purpose flour
- 1/2 cup rolled oats
- 1/2 cup brown sugar
- 1/2 cup cold unsalted butter, cut into small pieces
- 1 teaspoon vanilla extract
- Pinch of salt
Instructions:
- Preheat your oven to 375°F (190°C).
- Make the crust: In a medium bowl, combine flour and salt. Add the cold butter and use a pastry blender or your fingers to work it into the flour until the mixture resembles coarse crumbs. Gradually add the ice-cold water, stirring with a fork until the dough comes together in a ball.
- Roll out the dough on a lightly floured surface to a thickness of about 1/8 inch (3 mm). Transfer the dough to a 9-inch pie dish and trim the edges to fit.
- Prepare the filling: In a separate bowl, combine raspberries, granulated sugar, basil, and cornstarch. Let it sit for about 15 minutes, until the berries start to release their juice and the mixture becomes syrupy.
- Fill the crust with the raspberry-basil mixture and spread it out evenly.
