Raspberry Basil Crumble Bars

Sweet and tangy raspberry filling atop a crunchy oat crumble, infused with fresh basil.

Raspberry Basil Crumble Bars

Servings:

6-8 bars

Ingredients:

Crust:

  • 2 cups all-purpose flour
  • 1 cup rolled oats
  • 1/2 cup packed brown sugar
  • 1/2 cup cold unsalted butter, cut into small pieces
  • 1 tsp baking powder
  • 1 tsp salt
  • 1 cup chopped fresh basil

Filling:

  • 2 cups fresh raspberries
  • 1/4 cup granulated sugar
  • 2 tbsp cornstarch
  • 2 tbsp lemon juice
  • 1 tsp vanilla extract

Instructions

Crust:

  1. Preheat oven to 375°F (190°C). Line an 8-inch square baking dish with parchment paper.
  2. In a medium bowl, whisk together flour, oats, brown sugar, baking powder, and salt.
  3. Add cold butter and use a pastry blender or fingers to work it into the dry ingredients until crumbly mixture forms.
  4. Stir in chopped fresh basil.

Filling:

  1. In a separate large bowl, mix together raspberries, granulated sugar, cornstarch, lemon juice, and vanilla extract.

Assembly:

  1. Press half of the crumb mixture evenly into prepared baking dish.
  2. Top with raspberry filling.
  3. Cover with remaining crumb mixture.

Baking:

Bake for 40-45 minutes or until crust is golden brown and filling is bubbly. Let cool completely before cutting into bars.
