Raspberry Basil Crumble Bars

Ingredients:
Crust:
- 2 cups all-purpose flour
- 1 cup rolled oats
- 1/2 cup packed brown sugar
- 1/2 cup cold unsalted butter, cut into small pieces
- 1 tsp baking powder
- 1 tsp salt
- 1 cup chopped fresh basil
Filling:
- 2 cups fresh raspberries
- 1/4 cup granulated sugar
- 2 tbsp cornstarch
- 2 tbsp lemon juice
- 1 tsp vanilla extract
Instructions
Crust:
- Preheat oven to 375°F (190°C). Line an 8-inch square baking dish with parchment paper.
- In a medium bowl, whisk together flour, oats, brown sugar, baking powder, and salt.
- Add cold butter and use a pastry blender or fingers to work it into the dry ingredients until crumbly mixture forms.
- Stir in chopped fresh basil.
Filling:
- In a separate large bowl, mix together raspberries, granulated sugar, cornstarch, lemon juice, and vanilla extract.
Assembly:
- Press half of the crumb mixture evenly into prepared baking dish.
- Top with raspberry filling.
- Cover with remaining crumb mixture.
Baking:
Bake for 40-45 minutes or until crust is golden brown and filling is bubbly. Let cool completely before cutting into bars.
