- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1 orange bell pepper, diced
- 1/2 cup chopped fresh cilantro
- 1/4 cup crumbled feta cheese (optional)
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- 1 teaspoon cumin
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions:
- In a large bowl, combine the quinoa, chickpeas, bell peppers, and cilantro.
- Whisk together the olive oil, lemon juice, cumin, salt, and pepper in a small bowl.
