- 12 oz mascarpone cheese
- 1 cup granulated sugar
- 2 cups strong brewed coffee
- 1/4 cup pistachio paste
- 1 cup fresh raspberries
- 1/2 cup confectioners' sugar

- 8-10 ladyfingers
Instructions
Step 1: Prepare the Coffee Mixture
In a small bowl, combine the brewed coffee and confectioners' sugar. Stir until the sugar is dissolved.
Step 2: Dip the Ladyfingers
Dip each ladyfinger into the coffee mixture for about 3-5 seconds on each side. They should be soft and pliable but not too wet.
Step 3: Prepare the Pistachio Mousse
In a separate bowl, whip the mascarpone cheese until it becomes light and fluffy. Add the pistachio paste and mix well.
Step 4: Assemble the Tiramisu
In a large serving dish, create a layer of ladyfingers. You may need to trim them to fit the dish. Spread half of the pistachio mousse over the ladyfingers. Repeat the layers: ladyfingers, pistachio mousse, and raspberries.
Step 5: Top with Raspberry Mousse
In a separate bowl, whip the mascarpone cheese until it becomes light and fluffy. Add the confectioners' sugar and mix well. Fold in the fresh raspberries. Spread the raspberry mousse over the top layer of ladyfingers.
Step 6: Chill and Serve
Cover with plastic wrap and refrigerate for at least 3 hours or overnight. Slice and serve.
