Pistachio and Orange Blossom Crème Brûlée

A creamy pistachio-infused custard base, topped with a layer of caramelized sugar and fragrant orange blossom water.

Pistachio and Orange Blossom Crème Brûlée

Servings: 4-6

Ingredients:

  • 1 cup (200g) granulated sugar
  • 1/2 cup (120g) all-purpose flour
  • 1 tsp (5g) kosher salt
  • 1/2 cup (120ml) heavy cream
  • 1/2 cup (120ml) whole milk
  • 1/4 cup (30g) pistachio meal
  • 1 tsp (5g) vanilla extract
  • 1/4 cup (15g) orange blossom water
  • 3 large egg yolks

Instructions:

Step 1: Preheat and Prepare the Ramekins

Preheat your oven to 300°F (150°C). Pour the heavy cream, whole milk, sugar, flour, salt, pistachio meal, vanilla extract, and orange blossom water into a medium saucepan. Whisk until the mixture is smooth.

Step 2: Infuse the Cream Mixture with Pistachio Flavor

Whisk in the egg yolks until fully incorporated. Pour the mixture into 4-6 ramekins or small baking dishes. Place them in a large baking dish and pour hot water around the ramekins to create a water bath.

Step 3: Bake the Crème Brûlée

Bake for 25-30 minutes, or until the edges are set but the centers still feel slightly jiggly. Remove from the oven and let cool to room temperature. Cover with plastic wrap and refrigerate for at least 2 hours.

Step 4: Caramelize the Sugar Topping

Just before serving, sprinkle a thin layer of granulated sugar over the chilled crème brûlée. Use a kitchen torch to caramelize the sugar, or place the ramekins under the broiler for 1-2 minutes, watching closely until golden brown.

Step 5: Serve and Enjoy

Serve chilled, with the caramelized sugar on top.
