Ingredients
- 2 cups heavy cream
- 1 cup granulated sugar
- 1/2 cup whole milk
- 1 tsp vanilla extract
- 1/4 cup pistachio meal
- 1 tbsp honey
- 1/4 cup chopped fresh pistachios for garnish
Instructions
Make the Pistachio Crème Brûlée Base
- Preheat oven to 300°F (150°C).
- In a medium saucepan, whisk together cream, sugar, milk and vanilla extract.
- Add in pistachio meal and whisk until dissolved.
- Pour mixture into ramekins or small baking dishes.
- Bake for 25-30 minutes, or until edges are set but centers are still slightly jiggly.
Caramelize the Honey
- In a small saucepan, combine honey and 1 tbsp water over medium heat.
- Bring to a boil and cook for 2-3 minutes, or until caramelized and golden brown.
- Remove from heat and let cool slightly.
Assemble and Serve
- Let crème brûlée base cool completely in the refrigerator.
- Just before serving, sprinkle chopped pistachios over top of each ramekin.
- Drizzle warm caramelized honey over the pistachios.
- Caramelize sugar on top with a kitchen torch or under broiler for 1-2 minutes.
- Serve chilled and enjoy!
