Pistachio and Honey Crème Brûlée

A creamy pistachio custard base topped with a layer of caramelized honey and crunchy pistachios.

Ingredients

  • 2 cups heavy cream
  • 1 cup granulated sugar
  • 1/2 cup whole milk
  • 1 tsp vanilla extract
  • 1/4 cup pistachio meal
  • 1 tbsp honey
  • 1/4 cup chopped fresh pistachios for garnish

Instructions

Make the Pistachio Crème Brûlée Base

  1. Preheat oven to 300°F (150°C).
  2. In a medium saucepan, whisk together cream, sugar, milk and vanilla extract.
  3. Add in pistachio meal and whisk until dissolved.
  4. Pour mixture into ramekins or small baking dishes.
  5. Bake for 25-30 minutes, or until edges are set but centers are still slightly jiggly.

Caramelize the Honey

  1. In a small saucepan, combine honey and 1 tbsp water over medium heat.
  2. Bring to a boil and cook for 2-3 minutes, or until caramelized and golden brown.
  3. Remove from heat and let cool slightly.

Assemble and Serve

  1. Let crème brûlée base cool completely in the refrigerator.
  2. Just before serving, sprinkle chopped pistachios over top of each ramekin.
  3. Drizzle warm caramelized honey over the pistachios.
  4. Caramelize sugar on top with a kitchen torch or under broiler for 1-2 minutes.
  5. Serve chilled and enjoy!
