Pistachio and Honey Cinnamon Rolls

Ingredients:
Dough:
- 1 cup warm milk (105°F to 115°F)
- 2 teaspoons active dry yeast
- 3 tablespoons granulated sugar
- 4 cups all-purpose flour
- 1 teaspoon salt
- 1/4 cup unsalted butter, melted
- 1 large egg
Filling:
- 1/2 cup pistachio paste
- 1 tablespoon honey
- 1/4 cup granulated sugar
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
Instructions:
- In a small bowl, combine the warm milk and yeast. Stir to dissolve the yeast, then let sit for 5 minutes.
- In a large mixing bowl, whisk together the flour, sugar, and salt.
- Add the melted butter, egg, and yeast mixture to the dry ingredients. Mix until a shaggy dough forms.
- Knead the dough on a floured surface for 10-12 minutes, until it becomes smooth and elastic.
- Place the dough in a greased bowl, cover with plastic wrap, and let rise in a warm place for 1 hour, or until doubled in size.
Prepare the filling:
- Mix together the pistachio paste, honey, granulated sugar, cinnamon, and nutmeg in a small bowl.
Assemble the rolls:
- On a lightly floured surface, roll out the dough to a thickness of about 1/4 inch.
- Spread the pistachio-honey filling evenly over the dough, leaving a 1-inch border around the edges.
- Roll up the dough tightly but gently, and cut into 8-10 equal pieces.
- Place the rolls on a baking sheet lined with parchment paper, leaving about 1 inch of space between each roll.
Bake:
- Preheat your oven to 375°F (190°C). Bake the rolls for 18-20 minutes, or until golden brown.
- While the rolls are baking, prepare the glaze by mixing together 1/4 cup powdered sugar and 2 tablespoons honey in a small bowl.
Glaze and Serve:
- Remove the rolls from the oven and let cool on a wire rack for 5 minutes.
- Drizzle the pistachio-honey glaze over the warm rolls, then sprinkle with chopped pistachios if desired.
- Serve warm and enjoy!
