Pistachio and Cherry Crumble Bars
Introduction
These bars are a delightful combination of juicy cherries, crunchy pistachios, and a buttery crumble topping. Perfect for a quick dessert or snack.
Ingredients
Crust
- 1 1/2 cups all-purpose flour
- 1/4 cup granulated sugar
- 1/2 cup cold unsalted butter, cut into small pieces
Filling
- 1 cup fresh or frozen cherries, pitted
- 1/4 cup chopped fresh pistachios
- 2 tablespoons cornstarch
- 2 tablespoons granulated sugar
- 1 tablespoon lemon juice
Crumble Topping
- 1 cup rolled oats
- 1/2 cup all-purpose flour
- 1/2 cup packed brown sugar
- 1/2 cup cold unsalted butter, cut into small pieces
- 1 teaspoon vanilla extract
Instructions
Preheat and Prep
Preheat the oven to 375°F (190°C). Line an 8-inch square baking dish with parchment paper.
Make the Crust
In a medium bowl, whisk together the flour, sugar, and cold butter until crumbly. Press into the prepared baking dish.
Prepare the Filling
In a separate bowl, mix together the cherries, pistachios, cornstarch, granulated sugar, and lemon juice.
Assemble the Bars
Spread the cherry mixture over the crust. Top with the crumble topping (see below).
Make the Crumble Topping
In a medium bowl, combine the oats, flour, brown sugar, and cold butter. Mix until crumbly then stir in the vanilla extract.
Bake and Cool
Bake for 40-45 minutes or until golden brown. Let cool completely on a wire rack before slicing into bars.
Notes
- You can adjust the amount of cherries to your liking.
- Store leftover bars in an airtight container at room temperature for up to 3 days.
