Pistachio Crème Brûlée Brownies
Ingredients:
- 1 and 1/2 sticks of unsalted butter (12 tablespoons), plus more for greasing the pan
- 2 cups of sugar
- 4 large eggs
- 1/2 cup of pistachio meal
- 1 teaspoon of vanilla extract
- 1 and 1/4 cups of all-purpose flour
- 1/2 teaspoon of salt
- 1 cup of semi-sweet chocolate chips
- 1 cup of heavy cream
- 1/2 cup of granulated sugar (for the crème brûlée topping)
Instructions:
Preparing the brownies
- Preheat your oven to 350°F (175°C). Grease an 8-inch square baking pan and line it with parchment paper.
- Melt the butter and sugar in a medium saucepan over low heat, stirring occasionally.
- Remove the saucepan from the heat and stir in the pistachio meal, vanilla extract, flour, and salt.
- Let the mixture cool slightly, then stir in the chocolate chips until they're melted and the mixture is smooth.
- Pour the batter into the prepared pan and smooth out the top.
Baking the brownies
- Bake for 25-30 minutes or until a toothpick inserted into the center comes out with a few moist crumbs attached.
- Let the brownies cool completely in the pan.
Preparing the crème brûlée topping
- In a medium bowl, whip the heavy cream and granulated sugar until stiff peaks form.
- Spread the whipped cream over the cooled brownies.
Caramelizing the top
- Sprinkle a thin layer of granulated sugar over the whipped cream.
- Use a kitchen torch to caramelize the sugar, or place the pan under the broiler for 1-2 minutes, watching carefully until the sugar is golden brown.
Serve and enjoy!
Slice the brownies into squares and serve with a scoop of your favorite ice cream, if desired.
