Pistachio Crème Brûlée Brownies

Rich, fudgy brownies infused with the nutty flavor of pistachios and topped with a layer of caramelized cream.

Pistachio Crème Brûlée Brownies

Ingredients:

  • 1 and 1/2 sticks of unsalted butter (12 tablespoons), plus more for greasing the pan
  • 2 cups of sugar
  • 4 large eggs
  • 1/2 cup of pistachio meal
  • 1 teaspoon of vanilla extract
  • 1 and 1/4 cups of all-purpose flour
  • 1/2 teaspoon of salt
  • 1 cup of semi-sweet chocolate chips
  • 1 cup of heavy cream
  • 1/2 cup of granulated sugar (for the crème brûlée topping)

Instructions:

Preparing the brownies

  1. Preheat your oven to 350°F (175°C). Grease an 8-inch square baking pan and line it with parchment paper.
  2. Melt the butter and sugar in a medium saucepan over low heat, stirring occasionally.
  3. Remove the saucepan from the heat and stir in the pistachio meal, vanilla extract, flour, and salt.
  4. Let the mixture cool slightly, then stir in the chocolate chips until they're melted and the mixture is smooth.
  5. Pour the batter into the prepared pan and smooth out the top.

Baking the brownies

  1. Bake for 25-30 minutes or until a toothpick inserted into the center comes out with a few moist crumbs attached.
  2. Let the brownies cool completely in the pan.

Preparing the crème brûlée topping

  1. In a medium bowl, whip the heavy cream and granulated sugar until stiff peaks form.
  2. Spread the whipped cream over the cooled brownies.

Caramelizing the top

  1. Sprinkle a thin layer of granulated sugar over the whipped cream.
  2. Use a kitchen torch to caramelize the sugar, or place the pan under the broiler for 1-2 minutes, watching carefully until the sugar is golden brown.

Serve and enjoy!

Slice the brownies into squares and serve with a scoop of your favorite ice cream, if desired.
