Ingredients

For the Cake:

  • 2 1/4 cups (285g) all-purpose flour
  • 1 cup (200g) granulated sugar
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 cup (235ml) whole milk, at room temperature
  • 2 large eggs, at room temperature
  • 1 teaspoon pure vanilla extract
  • 1/4 cup (30g) ground pistachios

For the Lemon Buttercream Frosting:

  • 1 cup (200g) unsalted butter, softened
  • 2 cups (400g) powdered sugar
  • 2 tablespoons freshly squeezed lemon juice
  • 1 teaspoon grated lemon zest

Instructions

Preparing the Cake:

  1. Preheat your oven to 350°F (175°C). Grease two 9-inch (23cm) round cake pans and line the bottoms with parchment paper.
  2. In a medium bowl, whisk together flour, sugar, baking powder, and salt.
  3. In a large bowl, whisk together milk, eggs, vanilla extract, and ground pistachios.
  4. Add the dry ingredients to the wet ingredients and mix until just combined.
