Pistachio Cake with Honey and Orange Glaze

Ingredients:
For the cake:
- 1 1/2 cups (190g) ground pistachios
- 1 cup (200g) granulated sugar
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/2 cup (115g) unsalted butter, softened
- 2 large eggs
- 2 teaspoons pure vanilla extract
For the honey and orange glaze:
- 1/4 cup (60g) honey
- 2 tablespoons freshly squeezed orange juice
- 1 tablespoon granulated sugar
Instructions
To make the cake:
- Preheat your oven to 350°F (180°C). Grease two 8-inch round cake pans and line the bottoms with parchment paper.
- In a medium bowl, whisk together the pistachios, sugar, baking powder, and salt.
- In a large bowl, using an electric mixer, beat the butter until creamy. Add the eggs one at a time, beating well after each addition. Beat in the vanilla extract.
- Gradually add the dry ingredients to the wet ingredients, beating until just combined.
- Divide the batter evenly between the prepared pans and smooth the tops.
- Bake for 30 minutes or until a toothpick inserted into the center comes out clean. Let cool in the pans for 10 minutes before transferring to a wire rack to cool completely.
To make the honey and orange glaze:
- In a small bowl, whisk together the honey, orange juice, and granulated sugar until well combined.
- Drizzle the glaze over the cooled cake and serve.
Notes
- This recipe makes two 8-inch round cakes. You can also make one large layer cake by using a 9x13-inch pan.
- The pistachio flavor is quite strong in this cake, so if you're not a big fan of pistachios, you may want to reduce the amount used or substitute with another nut.
- The honey and orange glaze adds a lovely sweetness and citrusy flavor to the cake. You can adjust the amount of glaze to your liking!
