Ingredients:

For the cake:

  • 1 1/2 cups (190g) ground pistachios
  • 1 cup (200g) granulated sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup (115g) unsalted butter, softened
  • 2 large eggs
  • 2 teaspoons pure vanilla extract

For the honey and orange glaze:

  • 1/4 cup (60g) honey
  • 2 tablespoons freshly squeezed orange juice
  • 1 tablespoon granulated sugar

Instructions

To make the cake:

  1. Preheat your oven to 350°F (180°C). Grease two 8-inch round cake pans and line the bottoms with parchment paper.
  2. In a medium bowl, whisk together the pistachios, sugar, baking powder, and salt.
  3. In a large bowl, using an electric mixer, beat the butter until creamy. Add the eggs one at a time, beating well after each addition. Beat in the vanilla extract.
  4. Gradually add the dry ingredients to the wet ingredients, beating until just combined.
  5. Divide the batter evenly between the prepared pans and smooth the tops.
  6. Bake for 30 minutes or until a toothpick inserted into the center comes out clean. Let cool in the pans for 10 minutes before transferring to a wire rack to cool completely.

To make the honey and orange glaze:

  1. In a small bowl, whisk together the honey, orange juice, and granulated sugar until well combined.
  2. Drizzle the glaze over the cooled cake and serve.

Notes

  • This recipe makes two 8-inch round cakes. You can also make one large layer cake by using a 9x13-inch pan.
  • The pistachio flavor is quite strong in this cake, so if you're not a big fan of pistachios, you may want to reduce the amount used or substitute with another nut.
  • The honey and orange glaze adds a lovely sweetness and citrusy flavor to the cake. You can adjust the amount of glaze to your liking!
