Pineapple Upside-Down Cake Biscotti

Introduction

These sweet and savory biscotti are infused with the flavors of pineapple upside-down cake. The addition of caramelized pineapple rings and cherry pieces gives these Italian cookies a tropical twist.

Ingredients

Dry Ingredients

  • 2 1/4 cups (285g) all-purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 cup (200g) granulated sugar
  • 1/2 cup (100g) unsalted butter, softened
  • 2 large eggs
  • 1 tsp vanilla extract

  • 1 cup (115g) pineapple chunks
  • 1/4 cup (50g) cherry pieces

Instructions

Preparing the Biscotti Dough

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.
  3. In a large bowl, use an electric mixer to cream together sugar and butter until light and fluffy.
  4. Beat in eggs one at a time, followed by vanilla extract.
  5. Gradually mix in the dry ingredients until just combined.

Incorporating Pineapple Upside-Down Cake Pieces

  1. Fold in pineapple chunks and cherry pieces into the biscotti dough.
