Peach and Raspberry Crumble Bars
Ingredients
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup packed light brown sugar
- 1 tsp baking powder
- 1 tsp salt
- 1/4 cup unsalted butter, softened
- 2 large eggs
- 1 cup fresh peaches, diced
- 1 cup fresh raspberries
- 1 cup rolled oats
- 1/2 cup brown sugar
Instructions
Preheat and Prep
Preheat the oven to 375°F (190°C). Line an 8-inch square baking dish with parchment paper.
Make the Crust
In a medium bowl, whisk together the flour, granulated sugar, and brown sugar. Add the softened butter; use a pastry blender or your fingers to work it into the dry ingredients until the mixture resembles coarse crumbs.
Press the crumb mixture evenly into the prepared baking dish.
Bake the Crust
Bake for 15 minutes. Let cool slightly while preparing the filling.
Make the Filling
In a separate medium bowl, whisk together the eggs and granulated sugar until light and fluffy. Fold in the diced peaches and fresh raspberries.
Assemble and Bake
Pour the peach mixture over the baked crust. Top with the remaining crumb mixture and bake for an additional 25-30 minutes or until golden brown.
Let cool completely before cutting into bars and serving.
