Ingredients

  • 3 large ripe peaches, sliced
  • 1 cup (200g) granulated sugar
  • 1/2 cup (100g) packed light brown sugar
  • 1/2 cup (115g) unsalted butter, softened
  • 2 large eggs
  • 2 teaspoons grated orange zest
  • 2 tablespoons freshly squeezed orange juice
  • 2 cups (250g) all-purpose flour
  • 1 teaspoon baking powder
  • Salt to taste

Instructions

Preheat the oven and prepare the pan

Preheat the oven to 350°F (180°C). Grease a 9-inch (23cm) round cake pan and set it aside.

Prepare the peaches

In a large bowl, whisk together the sliced peaches, granulated sugar, and orange zest. Let it sit for about 10 minutes, until the peaches start to release their juices.

Mix the batter

In another large bowl, whisk together the flour, brown sugar, baking powder, and salt. In a separate bowl, whisk together the softened butter, eggs, and orange juice. Add the wet ingredients to the dry ingredients and mix until just combined.

Assemble the cake
