Ingredients

For the crust:

  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened

  • 3 ripe peaches, diced
  • 1/4 cup light brown sugar

Instructions

  1. Preheat your oven to 375°F (190°C). Line an 8-inch square baking dish with parchment paper or aluminum foil, leaving some overhang for easy removal.

  2. Make the crust: In a medium bowl, whisk together flour and sugar. Add the softened butter and use a pastry blender or your fingertips to work it into the dry ingredients until the mixture resembles coarse crumbs. Press this mixture evenly into the prepared baking dish.

  3. Bake the crust: Place the dish in the oven and bake for 15 minutes. After 15 minutes, remove the crust from the oven and let it cool slightly.

  4. Prepare the filling: In a large bowl, combine diced peaches, light brown sugar, cornstarch, and salt. Mix well until the peaches are evenly coated with the dry ingredients. Fold in the caramel sauce.

  5. Assemble the bars: Pour the peach mixture over the baked crust. Let it cool to room temperature.

  6. Make the crumble topping: In a separate medium bowl, combine oats, packed brown sugar, and cold butter. Use your fingers or a pastry blender until the mixture resembles coarse crumbs.

  7. Top with crumble: Evenly spread the crumble mixture over the peach filling.

  8. Bake the bars: Return the dish to the oven and bake for an additional 25-30 minutes, or until the topping is golden brown.

  9. Cool completely: Once done, remove from the oven and let cool in the pan for at least 10 minutes before slicing into bars and serving.
