These indulgent crumble bars are a creative take on the classic peach melba dessert. Layers of sweet peaches, creamy vanilla ice cream, and crunchy oat topping come together in a delightful treat that's perfect for warm weather.

Ingredients

  • 2 cups fresh peaches, diced
  • 1/4 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1 cup rolled oats
  • 1/2 cup brown sugar
  • 1/2 cup cold unsalted butter, cut into small pieces
  • 1 pint vanilla ice cream

Instructions

Make the Peach Filling

  1. Preheat oven to 375°F (190°C).
