Peach Cobbler Crunch Bars

A twist on traditional peach cobbler, these bars combine the flavors of warm peaches with a crunchy oat and brown sugar topping.

Peach Cobbler Crunch Bars

Ingredients:

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 1 tsp baking powder
  • 1 tsp salt
  • 1/4 cup unsalted butter, melted
  • 2 large eggs
  • 2 tsp vanilla extract
  • 3 cups sliced peaches (fresh or frozen)
  • 1 cup rolled oats
  • 1/2 cup brown sugar
  • 1/4 cup chopped pecans

Instructions:

  1. Preheat oven to 375°F (190°C). Line an 8-inch square baking pan with parchment paper.
  2. In a medium bowl, whisk together flour, granulated sugar, and brown sugar. Add melted butter, eggs, and vanilla extract; stir until combined.
  3. Press half of the mixture into prepared baking pan.
  4. Top with sliced peaches.
  5. Sprinkle remaining crumb mixture over peaches.
  6. Bake for 35-40 minutes or until golden brown.

Notes:

  • For an extra crunchy topping, sprinkle chopped pecans and additional brown sugar on top before baking.
  • Serve warm with vanilla ice cream for a decadent treat!
