Peach Cobbler Crunch Bars
Ingredients:
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup packed light brown sugar
- 1 tsp baking powder
- 1 tsp salt
- 1/4 cup unsalted butter, melted
- 2 large eggs
- 2 tsp vanilla extract
- 3 cups sliced peaches (fresh or frozen)
- 1 cup rolled oats
- 1/2 cup brown sugar
- 1/4 cup chopped pecans
Instructions:
- Preheat oven to 375°F (190°C). Line an 8-inch square baking pan with parchment paper.
- In a medium bowl, whisk together flour, granulated sugar, and brown sugar. Add melted butter, eggs, and vanilla extract; stir until combined.
- Press half of the mixture into prepared baking pan.
- Top with sliced peaches.
- Sprinkle remaining crumb mixture over peaches.
- Bake for 35-40 minutes or until golden brown.
Notes:
- For an extra crunchy topping, sprinkle chopped pecans and additional brown sugar on top before baking.
- Serve warm with vanilla ice cream for a decadent treat!
